Recipe: Minestrone with Ham Hock

This recipe is both delicious and affordable, for those who need to feed a big family on small budget.

Super easy and packed full of goodness. I use the slow cooker but you could also use a cooktop. I make a batch once a month and freeze portions for mid-week dinners.

Makes 6 adult or 10 child size portions

1 head fennel chopped
2 carrots chopped
1 zucchini chopped
1 onion chopped
1 leek chopped
1-2 garlic cloves chopped
¼-1/2 purple cabbage chopped
1 ham hock, rind and fat removed
1 tin cherry tomatoes (or any sort)
4 fresh tomatoes
1 tin borlotti beans, drained
Enough liquid chicken stock to just cover ingredients

Optional: Basil, olive oil and parmesan to finish

Throw everything in slow cooker. Cook 8+ hours.

Serve with pasta or crusty bread, a drizzle of olive oil and a good showering of parmesan.
